I tried a new recipe yestereday, and it was fabulous! And if you're not a shrimp person, you could successfully substitute a different meat, I'm sure.
Spicy Jalapeno-Shrimp Pasta (serves 4)
12 oz. large shrimp, peeled & deveined (I buy bags of ready-to-eat shrimp, so I just need to pull the tails off. Meijer has them BOGO from time to time... sometimes BOG2!)
8 oz. dried linguine or fettuccine
2 T. olive oil
1 fresh jalapeno pepper, finely chopped
1 clove garlic, minced
1/2 t. salt
1/4 t. ground black pepper
2 c. tomatoes, chunked
1. Thaw shrimp, if frozen. Rinse & pat dry. Cook pasta according to package directions. Drain well. Return pasta to pan; cover to keep warm.
2. Meanwhile, in a large skillet, heat oil over medium-high heat. Add all but shrimp & tomatoes. Cook & stir 1 minute. Add shrimp; cook about 3 minutes more or until shrimp are opaque. Stir in tomatoes; heat through.
3. Toss pasta with shrimp mixture. If desired, top with Parmesan cheese.
Mmm, mmm! I actually didn't use all of my jalapeno (He was a big guy!), and it had plenty of kick for us! We paired it with a nice salad, and that was it! Some crusty bread would've been good, too.

Sounds delicious! We don't do much with jalapeƱos though because Chloe doesn't dig spicy food. How I long to have a Meijer's nearby! Awesome store. Haven't tried any new recipes lately but I'm getting hungry for turkey burgers on the grill so I'll have to investigate allrecipes.com.

Tomorrow night I'm trying Tangy Chicken Fajitas. I'm actually starting them tonight because the chicken is marinaded overnight in an Italian dressing/lime juice marinade. Then you just saute in olive oil with peppers and onions and voila! :o)
