Easy-Peasy Cookies
1 (9-oz.) boxed cake mix
2/3 cup oats
1 stick butter, melted
1 egg
1/2 cup nuts, chips, or other add-in
Preheat oven to 375*. Mix all ingredients together, and shape into balls. Bake on ungreased baking sheets for 10-12 minutes or until just starting to brown.

The adventure lies in the mixy-matchy of the cake mix and the add-in. Tonight my 2 littles and I made them using a yellow cake mix and a combination of butterscotch & chocolate chips. I, however, am especially interested in the following possibilities:
- Dark chocolate fudge cake mix & dark chocolate chunks
- Rainbow chip cake mix & M&M's
- German chocolate cake mix & walnuts/coconut
- Caramel cake mix & butterscotch chips
