Easy-Peasy Cookies

I love this cookie recipe.  Here's why:
  1. They are delicious.  Just ask my love handles.  They know.
  2. You can have them whipped up and ready for the oven in less than 3 minutes.  Really!
  3. They contain only five ingredients.
  4. They are versatile!
  5. A less messy recipe (WOW, say that five times fast!) for baking with kids?  Doesn't exist!

And now, zee recipeeee.

Easy-Peasy Cookies
1 (9-oz.) boxed cake mix
2/3 cup oats
1 stick butter, melted
1 egg
1/2 cup nuts, chips, or other add-in

Preheat oven to 375*.  Mix all ingredients together, and shape into balls.  Bake on ungreased baking sheets for 10-12 minutes or until just starting to brown.

The adventure lies in the mixy-matchy of the cake mix and the add-in.  Tonight my 2 littles and I made them using a yellow cake mix and a combination of butterscotch & chocolate chips.  I, however, am especially interested in the following possibilities:
  • Dark chocolate fudge cake mix & dark chocolate chunks
  • Rainbow chip cake mix & M&M's
  • German chocolate cake mix & walnuts/coconut
  • Caramel cake mix & butterscotch chips
And as for baking with said little ones?  Talk about easy!  While the butter melted, Ellia dumped the cake mix, Brienna dumped the oats, and I cracked the egg.  I gave them each a couple chocolate chips so they wouldn't fight over the stirring job... and we were done!
